Ingredients

2 cups of long grain rice

2 tablespoon of vegetable oil

1 large onion, chopped

2 large tomatoes, chopped

2 scotch bonnet peppers, chopped

1 teaspoon of tomato paste

2 cups of beef or chicken broth

1 teaspoon of dried thyme

Salt and pepper to taste

2 bay leaves

Instructions

Prepare the ingredients

Heat oil in a pot

Saute the onions

Add the tomatoes

Add the pepper and garlic

Add the gingers and tomato paste

Add the broth and spices

Wash the rice with hot water and add it, cover and cook.
