Egusi soup is a staple in Nigeria Nature soup made with grounded melon seeds and vegetables. It is a  nutritious dish that is perfect for any occasion.

First, I will get my pot ready, then water and spoon.

Ingredients:

Cup of grounded egusi seeds (as you wish it to be)

Then star maggi precisely (I want it to be star maggi because I won’t add salt later)

Vegetables of you choice either (spinach, bitter leaf or pumpkin leaves any of your choice but I will be using spinach)

Scotch bonnet pepper (Ata Rodo precisely for me)

Chopped onions (very important)

Ginger and thyme seasoning

And goat meat or chicken with Ponmo (preferably like that)

How to prepare

Step 1: you put the pot on fire with little water then you add maggi, ginger, meat Ponmo and other seasoning. Cook it for 15- 20 minutes afterward remove from fire and put it aside

Step 2: you put palm oil inside a pan and ensure is hot very well while on that, you can add little water with your egusi and stirs till it melt together and blend by this time the oil is hot and ready for use then you start adding the egusi little by little till it finish

Step 3: then you reduce the fire and start steering and while doing that you continue adding little water time to time to avoid it been burn after doing this for 5 minutes or less you then pour the other pot of seasons on it and stir then you leave it for 5 minutes or .

Finally, you add your spinach and covered for sometimes then when open you stir and wait for a minutes then you remove from fire and we are done with the delicacy .

Now you can now prepare your Semovita to enjoy.

Happy eating
